Directions:
Prepare the Mint Cheesecake Layer:
Preheat oven to 325ยฐF (160ยฐC). Line an three 8-inch round pan with parchment paper and lightly grease it.
In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in peppermint extract and green coloring.
Pour into the prepared pan and bake for 35โ40 minutes, or until just set in the center. Let cool completely, then freeze for 1 hour for easy handling.
Make the Chocolate Cake Layers:
Increase oven temperature to 350ยฐF (175ยฐC). Grease and flour two 8-inch round pans.
In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, salt, and sugar.
Add eggs, buttermilk, oil, and vanilla; beat until combined. Slowly mix in hot coffee until smooth.
Divide the batter evenly between pans and bake for 30โ35 minutes, or until a toothpick comes out clean. Let cool completely.
Prepare the Mint Buttercream:
Beat butter until light and creamy. Gradually add powdered sugar, alternating with milk or cream, until fluffy.
Add peppermint extract and green food coloring to your desired shade.
Assemble the Cake:
Place one chocolate cake layer on a serving plate. Spread a thin layer of frosting on top.
Gently place the cheesecake layer over it.
Repeat the process for the second and third layer.
Frost the top and sides of the cake with mint buttercream. Smooth the surface with a spatula and chill for 30 minutes.
Add the Chocolate Ganache (optional):
Heat cream in a saucepan until just simmering. Pour over chocolate chips and let sit for 2 minutes, then stir until smooth.
Allow to cool slightly, then drizzle over the top edges of the cake for a โdripโ effect.
