For the Carrot Cake Bars:

Start by heating your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish or line it with parchment paper for easy removal.

2. Whisk Wet Ingredients

In a large mixing bowl, combine the oil, both sugarseggs, and vanilla extract. Whisk until the mixture is smooth and well-blended.

3. Mix Dry Ingredients

In a separate bowl, whisk together the flourbaking powderbaking sodasalt, and spices (cinnamonnutmeg, and cloves, if using). Gradually add the dry ingredients to the wet, mixing until just combined.

4. Add Carrots & Extras

Gently fold in the grated carrotsdrained pineapple, and nuts (if using), ensuring everything is evenly distributed throughout the batter.

5. Bake

Pour the batter into your prepared pan and smooth out the top. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. Let the bars cool completely in the pan.

6. Prepare the Frosting

While the bars cool, beat the cream cheese and butter together until light and fluffy. Gradually add the powdered sugar, followed by the vanilla extract and a pinch of salt. Beat until the frosting is smooth and creamy.
